- 1 package of 15 bean soup mix
- 1 can of diced tomatoes
- 1 can of tomato sauce
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 4 cups of water
- 2 tablespoons of olive oil
Equipment
- Large pot with lid
- Cutting board
- Knife
- Measuring spoons and cups
- Can opener
- Wooden spoon
Method
- Sort and rinse the 15 bean soup mix
- Heat olive oil in a large pot over medium heat
- Add chopped onion, red and green bell peppers, and minced garlic to the pot and sauté until onions are translucent
- Add chili powder, cumin, paprika, and salt to the pot and stir
- Add the sorted and rinsed beans, diced tomatoes, tomato sauce, and water to the pot
- Bring the mixture to a boil
- Reduce heat to low and cover the pot with a lid
- Simmer the chili for 1 hour and 30 minutes, stirring occasionally
- After 1 hour and 30 minutes, test the beans to see if they are tender
- If the beans are tender, turn off the heat and let the chili sit for 5 minutes before serving
Notes
For a spicier chili, add more chili powder or cayenne pepper. For a milder chili, reduce the amount of chili powder.Nutrition Info
