  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
For the butter chicken sauce:
  • 4 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 2 teaspoons ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon salt
  • 1 can (400g) diced tomatoes
  • 1 cup heavy cream
  • 1 tablespoon honey
  • Fresh cilantro, chopped for garnish

Equipment

  • Large mixing bowl
  • Large skillet or pot
  • Blender or food processor
  • Wooden spoon or spatula

Method

  1. In a large mixing bowl, combine all the ingredients for the chicken marinade. Mix well to coat the chicken pieces. Cover and refrigerate for at least 30 minutes or overnight.
  2. In a large skillet or pot, melt the butter over medium heat. Add the chopped onions and cook until they are soft and translucent, about 5-7 minutes.
  3. Add the minced garlic and grated ginger to the skillet and cook for another 2-3 minutes.
  4. Add the cumin powder, coriander powder, paprika, cinnamon powder, and salt to the skillet. Stir well and cook for 1-2 minutes.
  5. Next, add the diced tomatoes to the skillet and stir well. Bring the mixture to a simmer and cook for 10-15 minutes or until the tomatoes have broken down and the sauce has thickened.
  6. Using a blender or food processor, puree the tomato mixture until smooth. Return the sauce to the skillet and bring it back to a simmer.
  7. Add the marinated chicken to the skillet and stir well. Cook the chicken for 10-15 minutes or until it is cooked through.
  8. Stir in the heavy cream and honey. Cook for another 2-3 minutes or until the sauce has thickened and the chicken is fully coated.
  9. Garnish with fresh cilantro and serve hot with rice or naan bread.

Notes

  • If you don't have ginger garlic paste, you can use 1 tablespoon of minced garlic and 1 tablespoon of grated ginger instead.
  • For a spicier butter chicken, you can increase the amount of red chili powder or add a few chopped green chilies to the sauce.
  • If you want to make this recipe ahead of time, you can prepare the chicken marinade and sauce separately and store them in the refrigerator for up to 24 hours. When you're ready to cook, simply combine the two and follow the remaining steps.
